Arnavut Ciğeri(Fried Liver)Recipe

As far as i read, this dish was cooked by Albenians who were living in İstanbul during 16th century, and thats why we call it Albenian liver. I honestly doubt that if albenians aware of this dish , because we call a lot of foods with country names which they dont have any idea..My ex was iranian and once i seen a pie called iranian pie, i thought it would be nice surprise for him and bought , but he said that they dont have anythng like this in iran:)
Anyhow whether it is albenian dish or turkish , it is delicious which you can prepare in 10 min.

Muhammara is hot red pepper appetizer which belongs to Gaziantep kitchen. I like hot so it is one of my favourite appetizer and also the king of the table on sunday breakfasts at my home. If you dont like so hot , you can reduce the red pepper amount as your wish..

Today is 1st of May , Happy labor day to all!! Today is also important from a side that is my mum's birthday. She is the best mum ever.. She turned 53 , long live Mum! I love you..
Cig Borek is one of her favourite food which is famous in Eskişehir city in Turkey. I cooked lots of foods for her b.day but this was King of the table.
I cooked it with 1 gl of flour, and made 5 çiğbörek. I am giving original recipe, you can make it less or more as your desire.. Enjoy!!

I have tasted this dish in an iranian restaurant in Dubai. It is so delicious and easy to make, you can serve it with pita bread. They call it kashk in Iran , in Turkey we say Kaymak. I am not sure if you can find it wherever you are but it suppose to be sold in Middle eastern groceries. I think sour cream would be fine with it. My friend told kashk is something salty but Kaymak is not, so i used some salt more .. So you can just taste before heat off, and add more salt if needed.

I know it s been long time far from you but my dad had another operation; doctors said even it is a miracle that he is alive. We thank God for that. We stayed long time at hospital; thanks to my all friends and relatives who support us during bad times. I saw real friendship and also fake friends. Anyway now the most important thing is my dad is at home and he is able to eat anything so I made bulghur balls
for today evening which my family love too much. It is easy to make and very tasty.

This dish originally cooked with ground meat and called "lahmacun", this is the version with cheese, in turkish cheese mean "peynir" so we call this "peymacun" :)
The size is normally bigger, I wanted to make it smaller, it's a nice appetizer, mine is a bit crispy, the way I liked it, if you don't like crispy, you can add a bit water in the cheese mixture or maybe chopped tomato, with tomato juice it'd be softer.

Eid is going on in all muslim countries with all beauty. People visiting each other, eating dinner, sharing good things with feast sole. In every home there is a hurry to cook something for their guests and to welcome their guests in best way.
I cooked a pastry for guests, sure it is not only thing , i will share most of them with you so you can a bit feel about the feast we are having.
This recipe; i saw my friend Ferhat's blog, he has put inside onion and green pepper but i didnt add , i think you can add whatever you want.

Potato&Carrot Crocket
I love potato, i can eat it everyday ,i dont think i am gonna get bored of it. Today morning my mum has made potato salad for breakfast. But it wasnt enough potato for me i guess and i wanted to eat more potato :)) I like potato crocket, i wanted to try something else. I added carrot in it.. The taste was good. I reccomend you to try..

I am not sure if the pickle is right word for this, because when i write pickle in internet it just give me the one is cucumber pickle but when we make pickle at home normally it includes a lot like;cucumber,cabbage, tomato, gherkin,red cabbace,green pepper,beet,unripe melon and so on..we call it in Turkey "Tursu". My mum make pickle in big cans , after they been, we eat them with our dinner mostly. I like the salty taste of it. Also the water' s flavor in pickle is amazing, in Turkey there are some stores which sell pickle, and also the water of it.

If you never drunk that water ,at least once give a try if possible.. you will not regret.

Our can was for 5 lt. And the amounts we put in can is for that..

Falafel & Tarator Sauce Here is another delicious dish that i have tasted in Lubenon. It was soo good, they serve it in the bread with tomato, radish, lettuce and tarator sauce. One of best thing also i have just paid less than 2 usd:) it was so cheap and great taste. It is famous food in Middle East. Good food also for vegeterians.
One of my Egyptian friend told it is called as food for poor people.. but i dont care, i like it:))
maybe i should open a place to sell falafel , i am sure i d make good business:) in Egypt, Mc Donald sell a special called Mc Falafel:)))
I went a place in Beirut which is famous with falafel called BARBAR.. and they are open 24 hours i guess , you cant guess how much it is full. You never find it empty.... always someone wait to get falafel:)

Hummus
Here is the another tasty Lebanese dish.. We have it in Turkey as well with same name "Humus", it is an appetizer, we call this kinda dishes as "Meze".. Hummus mean in arabic "chick peas ". Mostly famous in arab countries but also in Turkey, Greece,Syria serve it as traditional food. While you are preparing it, the taste is detarmined by how to order the ingredients. For example; if you add garlic while you are mashing the chick peas , you will taste garlic more light..

This is one of my favourite food.. maybe i can say my favourite!! :) in Turkey we call it yaprak dolma(yaprak: grape leaf, dolma:being filled up) and in Lubenon they call it Waraq Enab, it is one of best mediterianne dish i suppose, you can cook it as olive oil as cold (zeytinyagli) or if you desire, it can be cooked with meat and serve hot..
But i like the cold version more .. in Lebanon they cook it more sour than we do here ,but it is tasty , it is up to you how much lemon you wanna add ..

I would never think the tahin (crushed sesame seeds) would suit into eggplant with yoghurt and garlic. But it does.. really.. Mutabbal was also one of my favourite dish in Lebanon. I am thinking , after i started this blog, i cooked a lot of variations of the eggplant! it is really good vegetable that you can cook in different and tasty ways. And mutabbal is one of them..

Dear my followers,
after long time i am back to write:) i was a kinda busy ,even if i cooked i couldnt share with you.
Also holy month Ramadan started which muslims fast, it is really holy month which i enjoy, during the Ramadan ,people help eachother, the big tents settled outside that give foods to people, after sunset people can eat and drink. everybody goes to eachother for iftar (meal after sunset), we used to go to friends,relatives,and also invite people.. it is really amazing... i really enjoy with this month...
This recipe from my friend Turkay, recently at 5th of Aug i celebrated my birthday , and woow i m 26:)) she has cooked and i loved it ,easy and tasty food, i dont know if i have wrote before i am fall in love with potato:))

This food was really hard to cook, i always loved it, i cant say it is cooked at my home so often but i understood why; it is realllyyyyy difficult to make it and takes much time, but i always love to eat it, i have guessed it is too hard but not this much expected:))
when i eat it ,i will eat slower anymore as i understood how hard it was cooked:)
i should honestly say when i was filling the bulghur, my mum helped me as i wasnt so successful.
Içli köfte is a food oftenly cooked in easten part of Turkey, i preffered to boil it to make it light but also you may fry it and i like it more ,but too fatty..
By the way i should add the pictures in recipes ;my mum's hands:)
